Workplace description: This hotel prides itself on traditional country house standards of comfort, luxury and service. The hotel has 36 individually decorated rooms and suites, fantastic food from two restaurants and outstanding spa and leisure facilities. The hotel has an excellent reputation and prides itself on delivering the highest standards of traditional service.

Main duties and responsibilities: We are looking for a professional Sous Chef to be the second in command in our main kitchen, following our Head Chef's specifications and guidelines. The successful candidate will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers' satisfaction.

Responsibilities:
Assist in the preparation and design of all food menus
Produce high quality cuisine in both design and taste
Conduct regular food tastings in order to assess suitability, quality and appropriateness
Ensure that the kitchen operates in a timely way that meets our quality standards
Fill in for the Head Chef in planning and directing food preparation when necessary
Resourcefully solve issues that arise and control problematic situations
Manage and train kitchen staff, establish working schedules and assess staff performance
Order supplies to stock inventory appropriately
Comply with and enforce food hygiene regulations and safe working practices
Maintain a positive and professional approach at all times

Essential criteria: 2+ years as a Sous Chef in a quality environment, preferably to a recognised award standard
Experience of working in all sections to a high standard
A keen eye for detail is essential
Good quality butchery and preparation skills of high quality ingredients
Understanding of various cooking methods, ingredients, equipment and procedures
Excellent record of kitchen and staff management
Familiar with industry best practices
